Ingredients:

  • 100g (1 cup) mixture of whole grains (brown rice, oat, millet, buckwheat, barley and rye); washed and drained in a colander
  • 2000ml water
  • 200g minced chicken breast

Condiments (optional):

  • 2 stalks spring onion, chopped
  • 3 tablespoons finely shredded young ginger
  • 3 tablespoons fried shallots
  • sesame oil, soy sauce, white pepper to taste

Methods:

  1. Soak the washed whole grains for 2 - 3 hours before cooking.
  2. Place the grains and 2000ml water in a medium pot, bring to boil. Add in minced chicken, carrot, potato and mushroom cubes and stir briefly.
  3. Simmer on low heat until the grains become very soft (takes about 1 - 1.5 hours). Add more water if the porridge gets very thick. Stir from time to time to prevent sticking.
  4. Ladle the porridge into a medium bowl. Sprinkle with chopped spring onion, shredded ginger, fried shallots, salt and white pepper, and drizzle sesame oil and soy sauce before serving.

Other methods of cooking the porridge:

  1. To cook in a rice cooker, place the grains and water in a rice cooker with porridge function and bring to a boil. Add in minced chicken, carrot, potato and mushroom cubes. Boil until the grains disintegrate and very soft (takes about 1 - 1.5 hours). Add more water if the porridge gets very thick. Stir from time to time to prevent sticking.
  2. If using a slow cooker, place whole grains, minced chicken, carrot, potato and mushroom cubes and pour 2000ml of hot water into the crock pot and leave to cook on low heat overnight.

Kids can help:

  1. Wash and drain grains in colander.

Chef Tips:

  1. To serve as breakfast, you can cook the porridge the night before, before you go to bed. Leave the cooked porridge in the pot on the stove, with lid closed, or leave in the rice cooker with lid closed. Reheat the next morning to serve as breakfast.
  2. If cooking on stove, do not close the lid fully when simmering as the porridge overspills easily when the lid is fully closed.
  3. Soaking washed whole grains for 2 - 3 hours before cooking helps the grains to cook faster.
